Fresh Tuna Salad

Quick, simple & super healthy fresh tuna salad with baby potatoes, green beans, lettuce & anchovies. Fresh tuna can be expensive but as a rich source of lean protein, omega-3 fatty acids & a wide variety of vitamins & minerals, it’s worth investing in occasionally. Don’t skip the anchovies – an ocean superfood.

Ingredients

  • 2 tablespoon cooking olive oil
  • 1 fresh high quality tuna steak (not frozen)
  • 6 salad potatoes, chopped
  • Green beans, chopped
  • Anchovies in oil
  • Gem lettuce leaves
  • French dressing
  • Black pepper

Serves 1

15 minutes

Warm the steak by leaving it out of the fridge for 20-30 minutes before cooking.

Directions

  1. Place the potatoes in a pan, cover with cold water & bring to the boil.
  2. Simmer for 10 minutes, add the green beans & continue to cook for 4- 5 minutes.
  3. Drain the vegetables & place back in the pan with a lid to keep them warm.
  4. Heat the oil in a small, non-stick frying pan. Your pan should be very, very hot.
  5. Sear the tuna steak for approx. 2 minutes each side. Good quality tuna doesn’t need cooking all the way through.
  6. Arrange the lettuce in a bowl with the potatoes, beans & drained anchovies.
  7. Cover the bowl with French dressing & black pepper to taste.
