Tuna Nicoise

Quick, simple & super healthy tuna nicoise with green beans, salad potatoes, eggs, black olives & French dressing. Ingredients

  • 145g tuna can, drained
  • Baby potatoes, chopped halfway
  • Chopped green beans, handful
  • 2 medium eggs
  • Black pitted olives, chopped
  • Gem lettuce
  • French dressing

Serves 1

15 minutes

Directions

  1. Place the potatoes in a pan of cold water, bring to the boil & then simmer for 8-10 minutes.
  2. Boil a small pan of water, use a spoon to gently lower the eggs into the water.
  3. Boil 9 minutes for hard boiled, 5 minutes for soft-boiled.
  4. Drain & run under a cold tap to stop the egg cooking.
  5. Drop the green beans into the pan of potatoes during the last 3 minutes of cooking.
  6. Drain the potatoes & beans & place back in the pan with a lid to keep warm.
  7. Arrange the lettuce in a bowl with the drained tuna.
  8. Peel the shell off the eggs & cut them in half.
  9. Place warm potatoes, beans & egg in the bowl.
  10. Serve with French dressing, olives & black pepper.
