Tuna & Lentil Salad

Quick, simple & super healthy tuna & green lentil salad. Brown, green, red, yellow or black lentils are low in calories, rich in iron & an excellent source of protein. Add lettuce & potatoes for a more substantial meal.

Ingredients

  • 160g can tuna, drained
  • 400g can green lentils in water, drained
  • 6 cherry tomatoes, chopped
  • 1 tablespoon dressing olive oil
  • 1 lemon, juiced
  • 1/2 teaspoon cayenne pepper
  • Black pepper

Serves 2

10 minutes

Directions

  1. Mix the oil, lemon, cayenne pepper & black pepper in a jug to make the dressing.
  2. Mix the tuna, lentils & chopped tomatoes together in a bowl & pour over the dressing.
  3. Serve with lettuce & potatoes.
