Tuna & Avocado Fishcakes

Quick, simple & super healthy tuna avocado fishcakes. Use wholegrain gluten-free breadcrumbs or smashed up gluten-free cornflakes or almond flour to help bond the cakes together. With tuna, egg, avocado & a mixed salad this meal has numerous health benefits.

Ingredients

  • 1 tinned tuna, drained
  • 1 egg, beaten
  • 1 ripe avocado, mashed
  • 2 tablespoons gluten-free breadcrumbs
  • 1 red onion, diced
  • 1 lime, juiced
  • 1 teaspoon Tabasco sauce
  • 1 garlic clove, chopped
  • Mixed salad

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. Line a baking tray with foil & spread with a bit of oil to help prevent the cakes sticking.
  3. In a bowl, mash the avocado. Mix in the tuna, breadcrumbs, red onion, lime juice, tabasco, garlic & egg.
  4. Use you hands to form into 4 cakes on the baking tray.
  5. Bake 10 minutes each side.
