Roasted Red Pepper

Quick, simple & super healthy roasted red pepper stuffed with tomatoes & basil basmati rice. Serve covered with pine nuts. A yummy vegetarian & vegan lunch. Having a meat free day once a week is a simple way to reduce your greenhouse gas emissions.

Ingredients

  • 1 tablespoon cooking olive oil
  • 2 red peppers
  • Tomato & basil basmati rice packet
  • 1/2 red onion, chopped
  • 1 tomato, chopped
  • Sunflower seeds
  • Black pepper
  • Pine nuts

Serves 2

35 minutes

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. Half & deseed the red peppers.
  3. Mix together rice, onion, tomatoes & oil and fill the peppers.
  4. Cover with foil & bake them for 30 minutes.
  5. Remove foil during last 10 minutes & sprinkle with pine nuts.
