Sweet Chilli Salmon Bowl

Quick, simple & super healthy sweet chilli salmon bowl. Pick your favourite vegetables & stir fry with a chopped salmon fillet. Spring onions & white onions are an alternative to the ones shown here.

Ingredients

  • 1 tablespoon cooking olive oil
  • 1 salmon fillet, skin removed & chopped
  • 1/2 onion, chopped
  • Vegetables chopped
  • 1 garlic glove, crushed
  • 3 teaspoon sweet chilli sauce
  • 1 teaspoon light soya sauce
  • 1 teaspoon fish sauce
  • 150g cooked rice noodles

Serves 1

15 minutes

Directions

  1. Heat the oil in a pan on a medium-high heat.
  2. Add the vegetables, onions, garlic & cook for 3-4 minutes.
  3. Add the salmon pieces & continue to cook for 4-5 minutes or until the salmon is nearly cooked.
  4. Mix in the sweet chilli, fish sauce, soya sauce & 100ml of water.
  5. Turn up the heat and cook for 2-3 minutes.
  6. Add rice noodles & heat them thoroughly, adding more water if needed.
