Sweet Chilli Salmon

Quick, simple & super healthy sweet chilli salmon with rice noodles. Salmon is one of the best sources of the long-chain omega-3 fatty acids EPA and DHA.

Ingredients

  • 1 tablespoon cooking olive oil
  • 1-2 salmon fillets skinned and diced
  • 150g straight to wok rice noodles
  • 1 onion, diced
  • 3 spring onions, chopped
  • 1 garlic clove, crushed
  • 1/2 red chilli, deseeded & chopped
  • 2 tablespoon sweet chilli sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon fish sauce

Serves 1

15 minutes

Directions

  1. Heat the oil in a pan on a medium-high heat.
  2. Add the onions, chilli & garlic, cook for 3-4 minutes.
  3. Add the salmon & stir fry until nearly cooked.
  4. Mix in the noodles, soya sauce, fish sauce, spring onions & sweet chilli sauce.
  5. Continue to stir fry until noodles are warm & salmon is cooked through.
