Steak Chimichurri

Quick, simple & grilled rib-eye steak in super-healthy chimmichurri sauce. Chimichurri is an uncooked sauce from Argentina & Uruguay used for seasoning grilled meat. Steak is high in saturated (bad) fat so it’s not a good idea to eat very often. The occasional cheeky indulgence will give you some B vitamins, iron and zinc. Eat once a month maximum. Chimmichurri sauce tastes just as good eaten with grilled chicken for a much healthier meal.

Ingredients

  • 2 rib eye steak fillets
  • Small bunch of flat-leaf parsley, chopped
  • 1/2 red onion, finely chopped
  • 3-4 garlic cloves, crushed
  • 1 lime, juiced
  • 2 tablespoon red wine vinegar
  • 1 red chilli, finely chopped
  • 4-6 asparagus stems
  • Olive oil
  • Black pepper

Warm the steaks by leaving them out of the fridge for 20-30 minutes before cooking

Directions

  1. Mix the parsley, onion, chillis, lime, garlic & vinegar with 2 tablespoons of olive oil in a bowl, to create the cold sauce.
  2. Heat 1 tablespoons of oil in a small frying or griddle pan. Your pan should be very, very hot.
  3. Sear the steaks for approx. 2-6 minutes each side depending on how you like your steaks cooked. Use tongs to turn the meat.
  4. Turn the heat down to low-medium & finish cooking till desired taste is reached. Alternatively you can put the steaks in the oven to finish cooking.
  5. Fry the asparagus along side the steaks, turning regularly with the tongs.
  6. Serve with sauce & black pepper.
