Smoked Salmon & Avocado Pitta

Quick, simple & super healthy smoked salmon, avocado, red chilli, spring onion & cucumber mush, served on a gluten free pitta. Like fresh salmon, smoked is a good source of protein, B vitamins, vitamin D, magnesium, selenium & omega-3. The downside is that it delivers a hefty dose of sodium so eat in moderation.

Ingredients

  • 1 ripe avocado
  • Smoked salmon, chopped
  • 1 red chilli, deseeded & chopped
  • 2 spring onions, chopped
  • Cucumber, diced
  • gluten-free pitta breads
  • Black pepper

Serves 2

10 minutes

Directions

  1. Mash a ripe avocado in a bowl with a fork.
  2. Mix in salmon, red chilli, spring onion & cucumber.
  3. Cut pittas in half & toast in a toaster.
  4. Serve avocado mash inside the warm pitta with black pepper.
