Smoked Haddock Frittata

Quick, simple & super healthy frittata with smoked haddock, leeks & peas. High in protein, omega fatty acids & other essential nutrients. Smoked fish is definitely a healthy food but it can be high in sodium so limit intake to a couple of times a week. Spinach, leeks & peas are packed full of vitamins, minerals & fibre. Frozen peas are a freezer must have.

Ingredients

  • 1 tablespoon cooking olive oil
  • 1/2 smoked haddock fillet, diced
  • 1/2 leek, chopped
  • 2 high quality eggs, beaten and seasoned with black pepper
  • Frozen peas, to taste
  • Spinach, to taste
  • Pine nuts

Serves 1

10 minutes

Directions

  1. Heat your grill to maximum.
  2. Heat  oil in a small oven proof frying pan.
  3. Fry the haddock & leeks over a medium-high heat for about 4 minutes.
  4. Add the peas, cook for 1 minute.
  5. Pour over the eggs, cook pulling the edges into the middle as they start to set.
  6. Sprinkle over the spinach which will quick start to wilt in to the mix.
  7. Cook for 3-4  minutes or until the egg is nearly set.
  8. Slide the pan under the hot grill for 3-4 minutes to set the egg and brown the top.
  9. Serve with a scattering of pine nuts & black pepper.
