Sea Bass Tray Bake

Quick, simple & super healthy sea bass tray bake with vegetables. The iron in sea bass is needed to keep your blood healthy. It it important to prevent anaemia by consuming iron.

Ingredients

  • 2 tablespoon cooking olive oil
  • 2 sea bass fillets
  • 1 red onion, diced
  • 1 red pepper, diced
  • 10 cherry tomatoes, sliced halfway
  • Purple-sprouting broccoli stems
  • Spinach, handful
  • Black pepper

Serves 2

15 minutes

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. When the oven is hot, pour the oil into a foil lined tray & put it in the oven to heat up for 10 minutes.
  3. Chop the vegetables.
  4. When the oil is hot remove the tray from the oven. Place the fish skin side down on the tray & scatter with the onions, tomatoes & broccoli.
  5. Return the tray to the oven & roast for 10 minutes.
  6. Remove the tray from the oven, drop the spinach on the top & stir it through so it wilts.
  7. Serve with black pepper.
