Roast Chicken Peas & Beans

Quick, simple & super healthy roast chicken, peas & broad beans. A body builder’s protein packed, classic meal. Peas & beans are a terrific source of protein, plus they are high in minerals & vitamin C. Remove the chicken skin for an extra lean protein hit. To add flavour cook the peas & broad beans in a low-salt organic chicken stock cube or alternatively, drizzle with french dressing.

Ingredients

  • Roast chicken breast fillet
  • Frozen peas
  • Frozen broad beans
  • 1 low-salt organic chicken stock cube

Serves 1

5 minutes

Directions

  1. Dissolve one low salt organic chicken stock cube in 500ml of boiling water.
  2. Pour stock into a pan and bring to the boil.
  3. Add the peas & beans then simmer for 4 minutes.
  4. Remove the skin from the chicken.
  5. Serve with heaps of black pepper.
