Madras Prawns

Quick, simple & super healthy prawns in Madras sauce. Dip some gluten-free pitta in the sauce for some delicious, high fibre fuel. Prawns are high in zinc so fantastic for boosting the immune system. Be warned this is seriously HOT & seriously good for you!!

Ingredients

  • 1 tablespoon cooking olive oil
  • Cooked large prawns
  • 1 onion, diced
  • Frozen peppers, to taste
  • 1 garlic clove, chopped
  • 1cm piece ginger, peeled & grated
  • 70g Madras paste pot
  • 400g can chopped tomatoes
  • Lettuce leaves

Serves 2

Directions

  1. Heat the olive oil.
  2. Add the onion & cook on a low heat for 5 minutes until soft.
  3. Add the prawns, turn up the heat & cook for 2-3 minutes.
  4. Turn the heat down, add the grated ginger, garlic, peppers & madras paste. Cook for 2 minutes.
  5. Add the tomatoes, bring to the boil, turn down & gently simmer for 5-10 minutes.
  6. Serve with a slotted spoon onto crisp lettuce.
