Salmon & Avocado Salad

Quick, simple & super healthy pink salmon, avocado, sweetcorn and potato salad. Use either fresh or tinned salmon, both are rich in vitamin D & omega-3, combined with avocado for an immune system super boost. Store-bought dressings are often high in saturated fat, sodium, added sugar & calories in addition to artificial colours, flavours & preservatives. Do your research to find a good one or learn to make your own.

Ingredients

  • 200g can pink salmon
  • 1 ripe avocado, chopped
  • 1/2 200g can sweetcorn, drained
  • 6 salad potatoes, cut halfway
  • Gem lettuce leaves
  • Black pepper
  • French dressing

Serves 1

15 minutes

Directions

  1. Place potatoes in a pan of cold water, bring to the boil & simmer for 10-15minutes or until cooked.
  2. Drain the salmon & place in a bowl.
  3. Pick out all the bones and skin.
  4. Serve salmon, sweetcorn, avocado, lettuce & potatoes with French dressing & black pepper.
