Breakfast Bowl

Quick, simple & super healthy nutrient-rich breakfast bowl with eggs, smoked salmon, avocado, cherry tomatoes & spinach. The runny yolk in soft boiled eggs doubles as a dressing to coat the bowl, however hard boiled eggs or scrambled are equally delicious. Add quinoa to ensure you keep full & satisfied until lunchtime.

Ingredients

  • Medium sized eggs
  • Smoked salmon
  • Cherry tomates
  • 1 ripe avocado, chopped
  • Spinach leaves
  • Black pepper

Serves 1

5-10 minutes

Directions

  1. Place smoked salmon, avocado, tomatoes & lettuce in a bowl.
  2. Boil a small pan of water.
  3. Use a spoon to gently lower the eggs into the water.
  4. Boil 9 minutes for hard boiled, 5 minutes for soft-boiled.
  5. Drain & run under a cold tap to stop the egg cooking.
  6. Peel the shell, cut halfway & serve.
