Mushroom & Bean Frittata

Quick, simple & super healthy mushroom, butter bean & spring onion frittata. Mushrooms contain B vitamins as well as a powerful antioxidant called selenium. Selenium helps to support the immune system & prevent damage to cells & tissues.

Ingredients

  • I tablespoon cooking olive oil
  • 2 high quality eggs, beaten & seasoned with pepper
  • 4 chestnut mushrooms, sliced
  • 200g butter beans, drained
  • 2 spring onions, chopped
  • Spinach, handful
  • Black pepper

Serves 1

10 minutes

Directions

  1. Heat your grill to maximum.
  2. Heat the oil in a small oven proof frying pan.
  3. Fry the mushrooms & spring onions over a medium-high heat for about 4 minutes.
  4. Pour over the eggs & beans, then cook pulling the edges into the middle as they start to set.
  5. Cook for 3-4 minutes or until the egg is nearly set.
  6. Slide the pan under the hot grill for 3-4 minutes to set the egg & brown the top.
  7. Serve with spinach &  more black pepper.
