Mexican Scrambled Egg

Ingredients

  • 2 eggs, beaten
  • Frozen fajita vegetable mix
  • 1 tablespoon drained black beans
  • Tabasco sauce, to taste
  • Cherry tomatoes, chopped
  • 1/2 avocado, sliced
  • Black pepper

Serves 1

5 minutes

Directions

  1. Pour some frozen fajita vegetables into the beaten eggs & season with Tabasco & black pepper.
  2. Pour mixture into a microwave dish & cover loosely with a lid.
  3. Cook on a medium heat, stop the microwave every 30 seconds & stir the mix. Continue until the eggs are nearly scrambled.
  4. Stir in the black beans & finish cooking for 30-60secs.
  5. Serve with avocado, cherry tomatoes and black pepper.
