Houmous Chicken Bake

Quick, simple & super healthy humous coated chicken with British baby potatoes & roasted vegetables. Houmous is a good source of plant-based protein & has a low glycemic index (GI). Potatoes have a high GI, however, when eaten in combination with protein their GI lowers. In addition boiling potatoes in water also lowers their GI.

Ingredients

  • 2 chicken breasts
  • 1 small pot reduced-fat houmous
  • 2 tablespoons cooking olive oil
  • Baby potatoes
  • Purple-sprouting broccoli
  • Cherry tomatoes
  • 1 red onion, sliced
  • Black olives
  • Black pepper

Serves 2

25 minutes

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. Place the chicken & chopped vegetables onto a baking tray lined with foil.
  3. Coat the top of each breast with 2 tablespoon of houmous & pour someĀ olive oil over the vegetables.
  4. Place the tray in the oven for approx. 20minutes.
  5. Place the potatoes in a pan of cold water & bring to the boil. Reduce the heat and simmer for 10-15mins.
  6. Drain the potatoes & place them back into the pan with a lid on to keep them warm until the chicken is cooked.
  7. Serve with a few black olives & black pepper.
