Harissa Cod

Quick, simple & super healthy harissa cod with seasonal vegetables & wholegrain rice. Packed with protein, B vitamins & minerals cod is very healthy.

Ingredients

  • 1 tablespoon cooking olive oil
  • 1 cod fillet
  • 1/2 courgette, diced
  • 1/2 onion, diced
  • 2 spring onions, chopped
  • 200g chopped tomatoes
  • 1 teaspoon ground coriander
  • 1/2 packet wholegrain rice
  • 1 teaspoon harissa paste

5 minute meal

Serves 1

Directions

  1. Heat the oil in a wok.
  2. Add the vegetables & fry for 1 minute.
  3. Add the fish & fry for 1 minute.
  4. Stir in the harissa paste.
  5. Add coriander, tomatoes & fry for 1 minute.
  6. Add the rice & continue stirring until hot.
