Chicken Avocado Burger

Quick, simple & super healthy grilled chicken, gluten-free burger with avocado mayonnaise & red onions. Marinate the chicken in olive oil, lemon & crushed garlic. Avocado is the only fruit that provides a substantial amount of healthy monounsaturated fatty acids (good fat). They are naturally nutrient dense & contain nearly 20 vitamins & minerals.

Ingredients

  • 2 chicken breasts sliced into halves lengthwise
  • 1 very ripe avocado, mushed
  • 1/2 teaspoon mayonnaise
  • 1 lemon, juiced
  • 1 garlic clove, crushed
  • Red onion, sliced in rings
  • 2 gluten-free triple seeded rolls
  • Cooking olive oil
  • Gem lettuce leaves
  • Black pepper

Serves 2

Chicken can be left to marinate for a few hours before cooking.

Directions

  1. Mix splash of olive oil, 1/2 juiced lemon & garlic in a bowl.
  2. Add the chicken & leave to marinate for 10 minutes – overnight in the fridge.
  3. Mix mushed avocado, lemon juice & mayonnaise in a bowl to make the mayo spread.
  4. Heat 1 tablespoon oil in a griddle pan.
  5. Grill the marinated chicken until cooked. Turning regularly.
  6. Spread the mayonnaise on both side both sides of each roll.
  7. Add chicken, red onion, lettuce & black pepper to create the finished burgers.
