Fajita Fish Bowl

Quick, simple & super healthy chunky pieces of fish in a spicy Mexican style sauce with veggies, beans & coconut rice. Use either cod or haddock. Both rich sources of protein, omega-3 fatty acids, vitamins & minerals. They are also low in calories and contain small amounts of fat.

Ingredients

  • 1 tablespoon cooking olive oil
  • 2 pieces of cod loin, diced
  • 1/2 red pepper, sliced
  • 1/2 yellow pepper, sliced
  • 1 red onion, chopped
  • Fajita seasoning
  • 1 tablespoon lemon juice
  • 1 ripe avocado
  • 200g Taco mixed beans (Aldi)
  • 1 packet coconut rice
  • Chilli flakes

Serves 2

15 minutes

Directions

  1. Mix the fish with the fajita seasoning & lemon in a bowl.
  2. Heat the oil in a large frying pan.
  3. Fry the onions & peppers on a medium-high heat for 4 minutes.
  4. Add the fish & fry until cooked.
  5. Heat the rice in the microwave as per pack instructions.
  6. Heat the beans in the microwave as per pack instructions.
  7. Serve fish with rice, beans, mashed avocado & chilli flakes.
