Curried Chicken Pitta

Quick, simple & super healthy curried chicken in a gluten free pitta. Add a good handful of pine nuts. Pine nuts are high in vitamin K, phosphorus, magnesium, zinc and manganese, which contribute to bone health.

Ingredients

  • 1 tablespoon cooking olive oil
  • 2 chicken breasts, diced
  • 2 teaspoons medium curry powder
  • 2 teaspoons garam masala
  • 1 teaspoon Manuka honey
  • 1 tablespoon lemon juice
  • 1 red onion, diced
  • Pine nuts, to taste
  • Spinach, to taste
  • 1 tablespoon vegan mayo
  • Gluten free pitta breads. toasted

Serves 2

15 minutes

Directions

  1. Mix spices, honey & lemon juice in a mixing bowl to make a paste.
  2. Stir in diced chicken breasts.
  3. Heat oil in a pan.
  4. Fry the onions for 3-4 minutes.
  5. Add the coated chicken & fry until sealed.
  6. Add pine nuts & spinach.
  7. Continue to fry until the meat is cooked & spinach wilted.
  8. Remove from heat & stir in the mayo.
  9. Served with mango chutney on gluten free toasted pittas.
