Chicken Pad Thai Noddles

Quick, simple & super healthy chicken Pad Thai with rice noodles. This dish is a Thai food menu staple. Add as many different vegetables as you like for a super sized fibre & vitamin hit to flavour the low calorie gluten-free rice noodles.

Ingredients

  • 2 tablespoons cooking olive or coconut oil
  • Cooked chicken, shreded
  • 2 x 150g straight to wok rice noodles
  • 4 spring onions, chopped
  • 2 garlic cloves, chopped
  • 2 eggs, beaten
  • 1 red pepper, diced
  • 1 lime, juiced
  • Chopped peanuts, handful
  • 1 carrot, grated
  • 3 tablespoons fish sauce
  • 1 tablespoon soya sauce light
  • 1 tablespoon Manuka honey
  • 2 tablespoons white wine vinegar
  • 1/4 teaspoon cayenne pepper

Serves 2

Directions

  1. Make the Pad Thai sauce in a jug by mixing together fish sauce, soy sauce, honey, vinegar & cayenne pepper.
  2. Heat oil in a frying wok.
  3. Fry the garlic & peppers for 4 minutes.
  4. Add the chicken & warm for 2-3 minutes.
  5. Push everything to the side of the wok & add the beaten eggs. Scramble the eggs, stirring constantly for 2  minutes.
  6. Mix everything together & add the noodles, lime juice, spring onions, carrot & sauce. Add a splash of water if needed.
  7. Continue stiring until everything is hot.
  8. Serve with chopped peanuts & more lime juice on top.
