Chilli Chicken Soup

Quick, simple & super healthy chilli miso soup with chicken, vegetables, garlic, ginger & chillies. Miso is full of protein, minerals & vitamins. As a fermented food, Miso provides the gut with beneficial bacteria that helps us to stay healthy.

Ingredients

  • 1 chicken breast
  • 1-2 chilli miso sachets
  • 3-4 spring onions, chopped
  • 1/2 red pepper, chopped
  • 1/2 red chilli, deseeded & chopped
  • 1 tablespoon light soya sauce
  • 1 tablespoon sweet chilli sauce
  • 1 garlic clove, chopped
  • 1 cm piece ginger, peeled & grated
  • 150g straight to wok rice noodles

Serves 1

15 minutes

Directions

  1. Poach the whole chicken breast in a pan of boiling water with 1 tablespoon of soy sauce for 8 minutes or until cooked.
  2. Make the miso as per pack instructions.
  3. Pour the chilli miso into a pan, bring to the boil & stir in sweet chilli sauce, soy sauce, spring onions, chillies, garlic, ginger & pepper.
  4. Add the noodles & cook for 1 minute.
  5. Add spinach & continue to cook for 3-4 minutes or until the noodles are soft.
  6. Drain & shred the meat.
  7. Serve with shredded chicken.
