Chicken Tikka Pitta

Quick, simple & super healthy chicken tikka pitta. Indian food is generally gluten-free but full of saturated fats. Use coconut or olive oil & spices to make tasty pastes to fry with chicken or prawns. Gluten-free stone baked pittas are a great alternative to greasy, glutenous naan breads.

Ingredients

  • 1 tablespoon cooking olive oil
  • 1 red onion, chopped
  • 2 chicken breast, diced
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 2 teaspoon tomato puree
  • 2 teaspoons garam masala
  • 1 garlic clove, chopped
  • 2 gluten free pittas, toasted
  • Iceberg lettuce, chopped

Serves 2

15 minutes

Directions

  1. Mix spices,  tomato puree & garlic with 2 tablespoons of olive oil in a mixing bowl to make a paste.
  2. Stir in diced chicken breasts.
  3. Heat oil in a pan.
  4. Fry the onions for 3-4 minutes.
  5. Add the coated chicken & fry till cooked.
  6. Served with lettuce on toasted pittas.
