Chicken Fajita Bowl

Quick, simple & super healthy chicken fajita bowl. No fattening cheese but still incredibly tasty. Add your choice of healthy topping including mashed avocado, high quality salsa or black beans. Avoid re-fried beans due to their high salt content. Option to use frozen fajita vegetables.

Ingredients

  • 1 tablespoon cooking olive oil
  • 2 chicken breasts, diced
  • 1 onion, chopped
  • Mixed peppers, chopped
  • 2 tablespoons fajita spice
  • 1 ripe avocado, mashed
  • Iceberg lettuce, chopped
  • Basmati wild rice packet
  • Black pepper
  • Optional - black beans or salsa

Serves 2

20 minutes

 

Directions

  1. Heat the oil in a pan.
  2. Fry the onions & peppers on a medium-high heat for 4 minutes.
  3. Add the chicken & fry until the meal is sealed.
  4. Add fajita spice, continue cooking till the meat is fully cooked.
  5. Heat the rice in the microwave as per pack instructions.
  6. Serve chicken with rice, lettuce with mashed avocado on top.
  7. Option to add black beans or salsa.
