Chicken Chow Mein

Quick, simple & super healthy chicken chow mein. For maximum nutritional value use as many vegetables as you can. Use shredded pre-cooked chicken and favour with both dark & light soya sauce.

Ingredients

  • 1 tablespoon cooking olive oil
  • Cooked chicken, shredded
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1/2 red pepper, chopped
  • 3-4 mushrooms, chopped
  • Handful frozen peas
  • Handful bean sprouts
  • 1 carrot, grated
  • 1 tablespoon dark soya sauce
  • 1 tablespoon light soya sauce
  • 1 tablespoon Manuka honey
  • 1 tablespoon oyster sauce
  • 300g straight to wok rice noodles
  • 2 spring onions, chopped
  • 1 red chilli, chopped
  • Optional: Sweet chilli sauce

Serves 2

15 minutes

Directions

  1. Heat 1 oil in a wok on a medium-high heat.
  2. Fry onions for 2-3 minutes.
  3. Add garlic & fry for 2-3minutes.
  4. Add peppers, mushrooms, carrot & fry for 2-3minutes.
  5. Add chicken & fry for 2-3 minutes (adding more oil if required).
  6. Mix in peas, soya sauce, oyster sauce & honey.
  7. Mix in noodles.
  8. Turn up the heat & stir fry for 2-3 minutes.
  9. Serve with spring onions, red chilli & sweet chilli sauce.
