Curried Chicken & Chickpeas

Quick, simple & super healthy spicy chicken with Jamie Oliver’s curried chickpeas & lentils . A rich source of vitamins, minerals & fibre, both offer a variety of health benefits, such as improving digestion, aiding weight management & reducing the risk of several diseases.

Ingredients

  • 1 tablespoon cooking olive oil
  • 1 chicken breast, sliced
  • 1/2 lemon, squeezed
  • I teaspoon medium curry powder
  • 1/2 onion, chopped
  • 1/2 red chilli, deseeded & chopped
  • 1 garlic clove, crushed
  • Jamie Oliver curried chickpeas packet
  • Spinach, handful

Serves 1

15 minutes

Directions

  1. Place chicken in a bowl.
  2. Mix in curry powder & lemon juice with a spoon.
  3. Heat oil in a frying pan.
  4. Fry garlic, chilli, onions, on a medium-high heat for 3-5 minutes.
  5. Add the chicken, stir fry until cooked.
  6. Serve on Jamie Oliver’s curried chickpeas & spinach.
