Chicken Casserole

Quick, simple & super healthy chicken casserole with white wine & butter beans. Great served with jersey royal potatoes. Contains a cheeky stock cube which can be high in salt. Make sure to get a gluten free, low salt alternative. With iron, zinc and magnesium, the butter beans provide the real goodness in this meal. Make without chicken & use a vegetable stock cube for a great vegetarian alternative.

Ingredients

  • 1 tablespoon cooking olive oil
  • 2 chicken breast, diced
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 1 red chilli, deseeded & chopped
  • 400g can chopped tomatoes
  • 1 teaspoon mixed herbs
  • Frozen peppers, to taste
  • 1 low-salt organic chicken stock cube
  • 400g can butter beans, drained
  • White wine, big splash
  • Jersey royal potatoes, sliced
  • Black pepper

Directions

  1. Place potatoes in a pan & cover with cold water.
  2. Bring to the boil, then simmer until cooked.
  3. Heat the oil in a pan.
  4. Cook onion, chilli, garlic on a medium heat for 4-5 minutes until soft.
  5. Add the chicken, continue to cook until the meat is sealed.
  6. Make chicken stock as per packet instructions.
  7. Add ΒΌ of the stock (disregard the rest).
  8. Add tomatoes, wine, mixed herbs, frozen peppers, butter beans & bring to the boil.
  9. Reduce the heat, simmer for 10-12 minutes or until the meat is cooked.
  10. Serve in a bowl with potatoes & plenty of black pepper.
