Caribbean Chicken Bowl

Quick, simple & super healthy Caribbean jerk seasoned chicken with coconut rice & chilli beans. Caribbeans love their spices and beans. Caribbean jerk seasoning is generally loaded with salt so look for a low salt, no msg, no preservative option. Add a big zinc hit by shopping in the ‘free from’ section in the supermarket to find a spicy organic bean mix to add to the rice.

Ingredients

  • 1 tablespoon cooking olive oil
  • 2 chicken breasts, diced
  • 1/2 lemon, juiced
  • 1 tablespoon Caribbean Jerk seasoning
  • 1 red onion, diced
  • Frozen peppers, handful
  • 1/2 400g spicy bean mix, drained
  • Coconut rice packet
  • Gem lettuce leaves

Serves 2

Directions

  1. Place chicken in a bowl.
  2. Mix in seasoning & lemon juice with a spoon.
  3. Heat oil in a frying pan.
  4. Fry garlic, chilli, onion & peppers on a medium to high heat for 3 minutes.
  5. Add the chicken, stir-fry until cooked.
  6. Serve on rice & lettuce.
