Cajun Salmon & Sweet Potato

Quick, simple & super healthy cajun spiced salmon with sweet potato mash & rainbow slaw. Sweet potatoes are highly nutritious. A great source of fibre, vitamins & minerals. The fibre & antioxidants are advantageous to gut health. Mash the potatoes with oil instead of butter.

Ingredients

  • 2 salmon fillets
  • 2 teaspoons cajun spice
  • 1/4 red cabbage, chopped
  • 3 spring onions, chopped
  • 2 carrots, peeled & grated
  • 2 tablespoons dressing olive oil
  • 2 tablespoon cider vinegar
  • 2 sweet potatoes, peeled and chopped
  • 1 tablespoon cooking olive oil
  • Pine nuts, handful
  • Black pepper

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. Place potatoes in a pan of cold water, bring to the boil & simmer for 15 minute still soft.
  3. Place fillets on a large piece of foil & sprinkle with cajun spice.
  4. Bring the foil up either side, fold it over & seal at the sides. Cook in the oven for 8 minutes.
  5. In a bowl mix the vinegar & olive oil.
  6. Mix in the cabbage, carrot, onions & black pepper.
  7. Remove the salmon from the oven & leave in the foil to stay warm whilst potatoes cook.
  8. Drain the potatoes & mash with cooking olive oil.
