Cajun Chicken & Roasted Vegetables

Quick, simple & super healthy cajun spiced chicken with sweet potato mash & roasted vegetables. Sweet potatoes are one of the richest natural sources of beta-carotene which converts to vitamin A. Vitamin A is critical to a healthy immune system.

Ingredients

  • 2 chicken breasts
  • Cooking olive oil
  • 2 teaspoon cajun spice
  • 1 red onion, chopped
  • 6 cherry tomatoes
  • 1 courgette, sliced
  • 1 red pepper, chopped
  • 3 sweet potatoes, peeled & sliced
  • Black pepper

Serves 2

20 minutes

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. Place the chicken on a foil lined baking tray.
  3. Sprinkle with cajun spice.
  4. Scatter the vegetables onto the tray & pour olive oil over them.
  5. Place the tray in the oven & roast for 20 minutes.
  6. Place the sweet potatoes in a pan of cold water & bring to the boil.
  7. Simmer for 15 minutes or until the potatoes are soft.
  8. Drain the potatoes and add a splash of oil olive to mash.
  9. Serve with black pepper.
