5 bean chilli

Smoked Chilli Bean Bowl

Quick simple & super healthy 3 bean chilli. High in protein, low in fat & calories. Add your favourite legumes. This dish contains chickpeas, butter beans, red kidney beans & black eyed beans. This spicy bowl is seriously good for your health & waistline.

Ingredients

  • 1 tablespoon cooking olive oil
  • 1 onion, diced
  • 3 garlic cloves, chopped
  • 1 tablespoon tabasco sauce
  • 2 teaspoons cumin
  • 2 teaspoons smoked paprika
  • 3-4 x 400g cans legumes, drained (any kind)
  • 400g tin chopped tomatoes with herbs
  • 1 knorr smoked chilli & tomato stock pot
  • 1 200g tin sweetcorn, drained

30 minutes

Serves 4-6

Directions

  1. Heat the oil in a pan.
  2. Cook onion on a medium heat for 4-5 minutes until soft.
  3. Add the cumin, garlic, tabasco, sauce, smoked paprika & continue to cook for 2-3 minutes.
  4. Make stock using 250ml boiled water.
  5. Add the stock, legumes, tomatoes, sweetcorn & bring to the boil.
  6. Reduced the heat & shimmer for 15-20mins.
  7. Serve in a bowl as a soup or with a jacket potato.
