Quick, simple & super healthy mackerel in spicy tomato sauce with sweetcorn, peppers & firecracker basmati rice. This highly nutritious & filling lunch takes less than 5 minutes to make. Mackerel has high levels of essential fatty acids which improve endurance & help aid recovery after exercise. Only 450 cals per bowl!

Ingredients

  • 125g can mackerel fillet in tomato sauce
  • 1/2 can sweetcorn drained
  • Frozen mixed peppers
  • 1/2 packet firecracker basmati rice

Serves 1

4 minutes

Directions

  1. Mix all the ingredients in a microwavable bowl.
  2. Cover with pierced cling film & cook in the microwave on high power for 2 minutes.
