Nando’s Peri Peri Chicken

Quick, simple & super healthy Nando’s medium hot peri peri chicken, peas & rice. Nando’s produce a huge range of sauce’s. Enjoy as a family meal by adding oven chips & corn-on-the-cob for the kids. Nando’s peri peri sauce is gluten-free, suitable for vegetarians and has no artificial colours, preservatives or flavours.

Ingredients

  • 4 skinless & boneless chicken thighs
  • Nando’s Peri-Peri rub
  • Firecracker hot spicy basmati rice packet
  • 200g sweetcorn can, drained
  • Frozen peas, handful
  • 1 red chill, deseeded & chopped
  • 1 carrot, peeled & grated
  • 1 tablespoon cooking olive oil
  • Iceberg lettuce, chopped
  • Black pepper
  • Nandos peri-peri medium hot sauce
  • Option - fresh mint, chopped

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. Rub the chicken thighs in the per-peri spice.
  3. Cover in foil & cook for 20-25 minutes.
  4. Boil the frozen peas in a pan for 4 minutes.
  5. Drain the peas & place in a bowl.
  6. Heat oil in the same pan & gently fry the chilli for 2 minutes.
  7. Turn up the heat, add peas, sweetcorn, carrot & fresh mint. Stir for 2 minutes to warm vegetables.
  8. Serve on rice & lettuce with hot sauce & black pepper.
