Chickpea Curry

Quick, simple & super healthy chickpeas & vegetables in a spicy tomato sauce. Yummy served on cauliflower rice for some additional low carb fuel. Rich in fibre & protein, chickpeas are an excellent choice for a vegetarian meal. They contain some key vitamins & minerals, including immune system boosting zinc.

Ingredients

  • 1 tablespoon cooking olive oil
  • 400g can chickpeas, drained
  • 400g can chopped tomatoes
  • 1 onion, diced
  • 1 red chilli, de-seeded & chopped
  • 2 garlic cloves, chopped
  • 1cm piece ginger, peeled & grated
  • 2 teaspoons garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 2 tablespoons tomato puree
  • Spinach, handful

Serves 2

Directions

  1. Heat the olive oil in a pan.
  2. Add onions & chilli & cook on a low heat for 5 minutes until soft.
  3. Add tomatoes, chickpeas, ginger, garlic, tomato puree, coriander, cumin & garam masala.
  4. Bring to the boil, then turn down &  gently simmer for 10-15 minutes.
  5. Add the spinach, cook for 1 more minute.
  6. Serve with a slotted spoon onto crisp lettuce.
