Pesto Salmon

Quick, simple & super healthy salmon baked in green pesto with a rice stuffed roasted yellow pepper. Pesto is high in vitamin A, vitamin C, calcium & iron. Pesto makes a great sauce for pasta, fish & chicken. There are heaps of ready-made pesto sauces on the market. Most contain cheese so try searching for a yummy vegan alternative. Versatile & packed with antioxidants, it’s worth a search for your fave green jar of goodness.

Ingredients

  • 2 salmon fillets
  • 2 tablespoons pesto
  • Tomato & basil basmati rice packet
  • 2 yellow peppers
  • 1/2 red onion, diced
  • 1 tablespoon cooking olive oil
  • Salad leaves
  • Black pepper

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. Place fillets on a large piece of foil, spoon over the pesto & set aside.
  3. Half & deseed the peppers.
  4. Mix together rice, onion & olive oil in a bowl.
  5. Fill the peppers with the mix.
  6. Cover with foil & bake them for 30 minutes.
  7. Remove foil during last 10 minutes & sprinkle with pine nuts
  8. Place the salmon in the oven and bake for 7-10minutes.
  9. Serve with salad leaves & black pepper.
