Seasonal Tuna Salad

Quick, simple & super healthy tuna salad with seasonal vegetables. Home grown seasonal lettuce & potatoes. For organic, nutrient dense meals try growing your own vegetables. Gardening is also great exercise & a natural stress reliever.

Ingredients

  • 145g can tuna, drained
  • Lettuce leaves
  • Salad potatoes, chopped half-ways
  • 3 spring onions, chopped
  • Black pitted olives, chopped
  • 1 medium sized egg
  • French dressing

Serves 1

15 minutes

Directions

  1. Place the potatoes in a pan of cold water &  bring to the boil. Simmer for 10-15.
  2. Place the lettuce, spring onions, tuna & olives in a serving bowl.
  3. Place water in a small pan & bring it to the boil. Add the egg & shimmer for 5 minutes.
  4. Run the egg under cold water to stop it cooking.
  5. Drain the potatoes & chop into smaller pieces.
  6. Peel the shell from the egg & chop 4 ways.
  7. Add egg, potatoes, French dressing & black pepper to the serving bowl.
