Spicy Prawn Curry

Quick, simple & super healthy spicy prawn curry with tomato, quinoa & wholegrain rice. Wholegrain rice is always the healthiest rice option with added extras like quinoa, there are many great options for nutritious, tasty ready-made rice. Always try to opt for wholegrain rice options as they still contain their germ & bran layers providing a range of nutrients including B vitamins, bone-building phosphorus & magnesium.

Ingredients

  • 1 tablespoon cooking olive oil
  • Large prawns, uncooked
  • 2 garlic gloves, chopped
  • 1cm ginger, peeled & grated
  • Frozen peppers, to taste
  • 1 onion, chopped
  • 400g can chopped tomatoes
  • 2 teaspoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Tomato, quinoa & basil basmati rice
  • Spinach, handful
  • Black pepper

Serves 2

15 minutes

Directions

  1. Heat the oil in a pan.
  2. Add the onion, cook on a low heat for 5 minutes until soft.
  3. Add the prawns, turn up the heat & cook for 2-3 minutes.
  4. Turn the heat down, add the grated ginger & garlic, cook for 2 minutes.
  5. Add the tomatoes, peppers & spices. Bring to the boil, then turn down the heat & gently simmer for 5-10 minutes.
  6. Scatter over the spinach to wilt in during the last 2 minutes of cooking time.
  7. Serve with a slotted spoon onto rice.
