Ratatouille with Prawns

Quick, simple & super healthy prawns in a courgette, tomato & spinach ratatouille. Ratatouille is a combination of vegetables cooked in healthy fat. Low in calories this meal is a great choice when weight loss is your goal.

Ingredients

  • 1 tablespoon cooking olive oil
  • Large cooked prawns
  • 1 onion, chopped
  • 1/2 courgette, chopped
  • 2 tomatoes, chopped
  • 1/2 red pepper, chopped
  • 1 garlic clove, chopped
  • 1 teaspoon red wine vinegar
  • 1 teaspoon tomato sauce
  • Spinach, handful
  • Black pepper

Serves 1

15 minutes

Directions

  1. Heat the oil in a pan on a medium-high heat.
  2. Add the onions & garlic, cook for 3-4 minutes.
  3. Add the tomatoes & courgettes, cook until soft.
  4. Mix in the tomato ketchup & vinegar.
  5. Add the prawns & spinach, cook until the prawns are hot & the spinach has wilted.
  6. Serve with black pepper.
