Prawn Rice Noodles

Quick, simple & super healthy Chinese style prawn rice noodles with peas & fresh tomatoes. Rice noodles provide a healthy alternative to yellow egg noodles in Asian recipes. They do not contain any wheat flour meaning they are gluten-free. Cooked tomatoes & green peas are low in calories & rich in vitamins, minerals & antioxidants.

Ingredients

  • 1 tablespoon cooking olive oil
  • 1 onion, chopped
  • 4 spring onions, chopped
  • 1 garlic clove, crushed
  • 3 tomatoes, chopped
  • 2 tablespoons tomato ketchup
  • 1 teaspoon fish sauce
  • Frozen peas, handful
  • 300g cooked rice noodles
  • Large cooked prawns

Serves 2

Directions

  1. Heat the oil in a pan on a medium-high heat.
  2. Add the onions, spring onions, garlic & cook for 3-4 minutes.
  3. Add the tomatoes & cook until soft.
  4. Mix in the tomato ketchup, fish sauce, peas, soya sauce & 100ml of water.
  5. Turn up the heat and cook for 2-3 minutes.
  6. Add the prawns & rice noodles & heat them thoroughly, adding more water if needed.
